New Favorite Side Dish

My husband normally handles grilling our main dish, and I am left with the task of coming up with fun and interesting sides to accompany the meal.  This recipe only has 3 ingredients, and is delicious:  http://allrecipes.com/recipe/prosciutto-wrapped-asparagus/detail.aspx  Just make sure to wash and cut off the tough tips of the asparagus, before rolling the proscuitto around it.  Put in the oven, and leave for 15min!  The asparagus gets tender, and the proscuitto gets a bit crispy...  wonderful combination.  I have served with ribs, steak, and with chicken, and it pairs very well with all of them!

Grilled Pizza

I have a feeling this is going to be our go-to all grilling season!  One of my clients got a Big Green Egg, and when I asked what his favorite thing to grill on it was, I was not expecting pizza to be the response.  Spencer & I grill multiple times per week in summer, but had never once tried grilled pizza.  After the conversation with my client, I was inspired to look for recipes and give it a try!

I made the dough from this recipe:  http://allrecipes.com/recipe/grilled-pizza/detail.aspx  which was very simple; however, in my research, it seems that your favorite store-bought dough should work as well.  The key is just rolling it thin, and making sure your grill is pre-heated to 400 degrees before putting the dough directly on the rack.  I made one batch of the dough, and divided into 8 individual pizzas for a group of four of us, and had a bunch of toppings for everyone to create their own.  My favorite had:  pesto for sauce, proscuitto, fresh mozarella, basil, and parmesean cheese.  So delicious!   An even easier option is to buy "take and bake" pizzas from your local grocery store or pizza place, and throw them on your grill at home!
